A bold, refreshing mezcal cocktail featuring fresh grapefruit, lime juice, coriander-infused simple syrup, and a fragrant burnt sage garnish inspired by New Mexico.

For the coriander simple syrup (makes extra for storage):
- ½ cup water
- ½ cup granulated sugar
- 1 tbsp whole coriander seeds, lightly cracked
For the cocktail:
- 2 oz mezcal
- 1 oz fresh grapefruit juice
- 1.5 oz fresh lime juice
- 1 oz coriander-infused simple syrup
- 1 fresh sage leaf (for garnish)
- Fresh ice cubes
Instructions
- Prepare the Coriander Simple Syrup: Combine water, sugar, and cracked coriander seeds in a small saucepan over medium heat. Stir until the sugar is completely dissolved. Bring to a gentle simmer for 2 minutes, then remove from heat. Let steep for 15 minutes, strain out the seeds, and cool completely before using.
- Combine Ingredients: In a cocktail shaker, combine 2 oz mezcal, 1 oz fresh grapefruit juice, 1.5 oz fresh lime juice, and 1 oz prepared coriander simple syrup.
- Dry Shake: Dry shake the liquid ingredients vigorously without ice for 10–15 seconds to fully emulsify the citrus juices and aromatic syrup.
- Build & Serve: Fill a rocks glass with fresh ice. Pour the shaken cocktail mixture over the ice.
- Garnish & Flame: Hold a fresh sage leaf over the glass and use a match or lighter to briefly char the edge until fragrant and lightly smoking. Drop the burnt sage leaf onto the top of the ice.
